Ingredients for Cabbage Soup with Beef
- 1 Tbsp. olive oil
- 1 lb. lean ground beef or lean turkey
- 1 tsp. salt
- 1 tsp. dried oregano
- 1 tsp. dried thyme
- 1 medium yellow onion, chopped
- 3 medium carrots, peeled and chopped
- 3 celery ribs, chopped
- 2 garlic cloves, minced
- 1 medium green cabbage, chopped
- 2 cans (28 ounces) diced, or crushed tomatoes
- 4 cups (2 14.5 ounce cans) beef bone broth or stock
- *Optional: garnish with fresh parsley, chopped, or add ¼ tsp. red pepper flakes for some spice
How to Make Cabbage Soup with Beef
- In a large pot, heat the oil over medium-high heat and brown the ground beef—season with salt, oregano, and thyme.
- Add your chopped onion, chopped carrots, and chopped celery and saute until onion is translucent; about 2-3 minutes.
- Saute garlic and chopped cabbage until garlic is fragrant.
- Add tomatoes and beef broth. Simmer for 20-30 minutes covered.

Yes! All you need to do to make this soup in a slow cooker is follow the directions in the original stovetop recipe, but put everything in the slow cooker and cook on low for about 6 hours or on high for 3 hours.
Can I make this soup in a pressure cooker?
You can make this soup in a pressure cooker too! Just follow the directions like you would for the stovetop. Put your lid on sealing and set to manual high pressure for 8 minutes. Do a quick release, but be careful!
Be sure to do the steam release incrementally at first because of the high amount of liquid in the pot. It may squirt a little steam, but don’t be too alarmed.
Can I add more vegetables to this soup?
Of course, you can add more veggies! Some great ideas are cauliflower, corn, zucchini, kale, green beans, butternut squash, or acorn squash. There are so many different options. I like to spiralize my zucchini for soup because it gives the soup some fun texture.

Freezing soup is straightforward, and this soup freezes well. I like to put my soup in a gallon-sized freezer bag, seat it, and then put it in a plastic container to keep it from getting punctured in the freezer.
To reheat soup after freezing, all you need to do is put the frozen soup in a slow cooker on low and let it heat through. You can also heat it on the stove.
